  • 200 g rolled oats
  • 75 g almond flour
  • 50 g honey or maple syrup
  • 60 ml coconut oil, melted
  • Zest of 2 limes
  • 30 ml lime juice
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 50 g chopped nuts (e.g., walnuts or almonds)
  • Additional lime zest for garnish optional
  • 25 g dried cranberries or raisins (if desired) optional

Method
 

  1. Preheat your oven to 180°C (350°F) and line the baking dish with parchment paper, leaving some overhang for easy removal.
  2. In a mixing bowl, combine the rolled oats, almond flour, ground cumin, and salt. Stir until well mixed.
  3. In a separate bowl, whisk together the melted coconut oil, honey or maple syrup, lime juice, and lime zest until smooth.
  4. Pour the wet ingredients into the dry mixture. Stir well to combine all ingredients, ensuring everything is evenly coated. If you are adding nuts or dried fruits, fold them in at this stage.
  5. Transfer the mixture into the prepared baking dish and press it down firmly with the back of a spatula to ensure it’s compact.
  6. Bake in the preheated oven for about 25 minutes or until the top is lightly golden and firm to the touch.
  7. Remove the bars from the oven and let them cool in the baking dish for about 10 minutes. Use the parchment overhang to lift them out, then slice into squares or rectangles.
  8. Allow the bars to cool completely on a wire rack before storing them in an airtight container.
