Ingredients
  

  • 600 g chicken thighs, skinless and boneless
  • 2 tbsp vegetable oil
  • 1 (150 g) large onion, finely chopped
  • 3 cloves garlic, minced
  • 2 (150 g) medium carrots, diced
  • 2 (300 g) medium potatoes, diced
  • 2 tbsp tomato paste
  • 1 tbsp sweet paprika
  • 1 tsp caraway seeds
  • 1 tsp marjoram
  • 1 tsp thyme
  • 1 tsp black pepper
  • 1 liter chicken broth
  • to taste Salt
  • for garnish Fresh parsley
  • 100 g sour cream optional
  • for serving Crusty bread optional

Method
 

  1. Begin by chopping the chicken thighs into bite-sized pieces and seasoning them lightly with salt.
  2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the diced carrots and potatoes to the pot, mixing them in to incorporate with the sautéed onions and garlic.
  5. Next, add the chicken pieces to the pot and brown them lightly for about 5 minutes, stirring occasionally.
  6. Stir in the tomato paste, sweet paprika, caraway seeds, marjoram, thyme, and black pepper. Cook for another 2 minutes, allowing the spices to release their fragrance.
  7. Pour in the chicken broth, bring the mixture to a boil, then reduce heat to low and let it simmer uncovered for about 45 minutes. The goulash should thicken, and the chicken should be tender.
  8. Taste and adjust the seasoning with salt if necessary. If you prefer a thicker goulash, you may blend a portion of it until smooth and return it to the pot.
  9. Once cooked, let the goulash rest for 10 minutes before serving to enhance the flavors.
  10. Serve the goulash warm in deep bowls, garnished with fresh parsley and a dollop of sour cream if desired, alongside crusty bread.
