Ingredients
  

  • 250 g raw sesame seeds
  • 150 g brown sugar
  • 60 g unsweetened cocoa powder
  • 100 ml strong brewed coffee
  • 120 g unsalted butter
  • 1 tsp vanilla extract
  • 1/2 tsp sea salt
  • 150 g mixed fresh berries (strawberries, blueberries, raspberries) optional
  • 30 g powdered sugar (for dusting) optional

Method
 

  1. Line a baking tray with parchment paper and set aside.
  2. In a dry skillet over medium heat, toast the sesame seeds until golden, about 5-7 minutes. Stir frequently to avoid burning. Remove from heat and let cool.
  3. In a saucepan, combine the brown sugar, cocoa powder, unsweetened coffee, butter, and sea salt. Cook over medium heat until the mixture starts to simmer, stirring continuously for about 5 minutes. The mixture should be smooth and glossy.
  4. Remove the saucepan from the heat and stir in the vanilla extract and toasted sesame seeds until well mixed.
  5. Carefully pour the mixture into the prepared baking tray, spreading it evenly with a spatula.
  6. Allow the brittle to rest at room temperature for about 20 minutes until set. If you wish, you can speed up the setting process by placing it in the refrigerator for 10 minutes.
  7. Once set, cut the brittle into neat pieces. Serve with a scattering of fresh mixed berries and a light dusting of powdered sugar, if desired.
