  • 50 g unsweetened cocoa powder

Method

  3. Gradually add the wet ingredients to the dry ingredients, stirring gently until the batter comes together. Avoid overmixing; it should be thick and fudgy.
  4. Heat the vegetable oil in a deep frying pan over medium heat until it reaches 175°C (350°F).
  5. Carefully drop spoonfuls of the batter into the hot oil, frying 2-3 fritters at a time for about 2-3 minutes on each side, or until golden brown.
  6. Use a slotted spoon to remove the fritters and place them on a cooling rack to drain excess oil.
  7. Allow to rest for 5 minutes before serving, then dust with powdered sugar and garnish with extra citrus zest if desired.
