  • 400 g canned chickpeas
  • 200 g mixed salad greens
  • 150 g cherry tomatoes
  • 100 g carrots
  • 1 tbsp extra-virgin olive oil
  • 2 tbsp honey
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • Salt
  • pepper
  • fresh parsley
  • lemon wedges
  • 50 g sliced almonds or walnuts optional
  • 100 g feta cheese, crumbled optional

Method
 

  1. In a large mixing bowl, combine the drained chickpeas, mixed greens, halved cherry tomatoes, and grated carrots.
