Ingredients
  

  • 700 g fresh cod fillets
  • 4 large pita breads, cut into triangles
  • 200 g cucumber, diced
  • 150 g radishes, thinly sliced
  • 100 g fresh cilantro, chopped
  • 60 ml honey
  • 60 ml Dijon mustard
  • 30 ml olive oil
  • Salt and pepper, to taste
  • 60 ml tahini for drizzling optional
  • Extra chili flakes for heat, if desired optional

Method
 

  1. Preheat your oven to 200°C (400°F).
  2. In a mixing bowl, combine the honey, Dijon mustard, olive oil, salt, and pepper to create a marinade.
  3. Place the cod fillets in the baking dish and pour the marinade over the fish, ensuring it is well-coated.
  4. Arrange the pita triangles around the cod in the baking dish, making sure to spread them evenly.
  5. Bake in the preheated oven for 20 minutes, or until the cod is cooked through and flakes easily with a fork. The pita should be golden and crisp.
  6. While baking, prepare the cucumber and radishes. Mix them together in a bowl with a pinch of salt and set aside.
  7. Once the dish is done, remove it from the oven and let it rest for 5 minutes.
  8. Top the bake with the diced cucumber, sliced radishes, and chopped cilantro. Drizzle with tahini before serving. Enjoy your meal!
