Preheat your oven to 200°C (400°F).
In a mixing bowl, combine the honey, Dijon mustard, olive oil, lemon juice, salt, and pepper to create the honey mustard sauce.
Season the salmon fillet with salt and pepper, then brush with half of the honey mustard sauce. Place it on a baking tray.
Bake the salmon in the preheated oven for about 15–20 minutes, or until it is opaque and flakes easily with a fork.
Remove the salmon from the oven and let it rest for 5 minutes before flaking it into bite-sized pieces.
In a bowl, mix the flaked salmon with the diced bell peppers, steamed broccoli, and the remaining honey mustard sauce.
Warm the pita breads in the oven for 2–3 minutes, or until gently heated.
Carefully cut each pita in half and stuff with the salmon and vegetable mixture.
Drizzle with tahini sauce and garnish with fresh parsley, if desired.
