- In a small mixing bowl, combine honey mustard and olive oil to create a dressing. Set aside.
- Heat a frying pan over medium heat.
- Add the sliced zucchini to the pan and sauté for 3-4 minutes, until slightly soft. Remove and set aside.
- In the same pan, lightly toast the bread slices for 1-2 minutes on each side until golden brown.
- Layer one slice of bread with lettuce, followed by turkey, sautéed zucchini, and cucumber. Drizzle with honey mustard dressing.
- Top with the second slice of bread. If using, press down gently with a sandwich press.
- Allow the sandwich to rest for about 5 minutes, then slice in half and serve with a side salad.
