  • 200 g sliced turkey breast
  • 2 slices of whole grain bread
  • 100 g cucumber, thinly sliced
  • 80 g zucchini, thinly sliced
  • 3 tbsp honey mustard
  • 1 tbsp olive oil
  • (for serving) Fresh lettuce leaves
  • (to taste) Cracked black pepper optional
  • (such as basil or dill) Leafy herbs optional

Method
 

  1. In a small mixing bowl, combine honey mustard and olive oil to create a dressing. Set aside.
  2. Heat a frying pan over medium heat.
  3. Add the sliced zucchini to the pan and sauté for 3-4 minutes, until slightly soft. Remove and set aside.
  4. In the same pan, lightly toast the bread slices for 1-2 minutes on each side until golden brown.
  5. Layer one slice of bread with lettuce, followed by turkey, sautéed zucchini, and cucumber. Drizzle with honey mustard dressing.
  6. Top with the second slice of bread. If using, press down gently with a sandwich press.
  7. Allow the sandwich to rest for about 5 minutes, then slice in half and serve with a side salad.
