- Begin by melting the dark chocolate in a double boiler or in a microwave-safe bowl. If using a microwave, heat for 30-second intervals, stirring in between until smooth and fully melted.
- In a mixing bowl, combine the melted chocolate with almond butter, honey (or maple syrup), lemon zest, chopped mint, chopped basil, and a pinch of sea salt. Stir well to create a homogenous mixture.
- Line a silicone mold or a baking tray with parchment paper.
- Pour the chocolate mixture into the mold or form small bite-sized portions on the parchment. Keep them around 2.5 cm in diameter for easy handling.
- If desired, sprinkle crushed pistachios on top of each portion to add texture and flavor.
- Place the mold or tray in the refrigerator and let it set for about 30 minutes until firm.
- Once set, gently remove the bites from the mold or cut them into squares if using a baking tray. Serve chilled or at room temperature.
