- Preheat your oven to 180°C (350°F) and grease the cake pan.
- In a mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
- In a separate bowl, mix the milk, vegetable oil, eggs, and vanilla extract.
- Combine the wet ingredients with the dry ingredients and mix until just combined. Do not over-mix.
- Gently fold in the mixed fresh berries, being careful not to break them apart.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake in the preheated oven for 30 minutes or until a toothpick inserted into the center comes out clean.
- Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring to a cooling rack.
- Once cool, spread your choice of fruit jam over the top. Slice and serve, garnished with fresh berries and whipped cream if desired.
