Ingredients
  

  • 200 g all-purpose flour
  • 150 g granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 120 ml milk
  • 90 ml vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 150 g mixed fresh berries (strawberries, blueberries, raspberries)
  • 100 g fruit jam (your choice, e.g., raspberry, strawberry) optional
  • Fresh berries for garnish optional
  • Whipped cream (optional) optional

Method
 

  1. Preheat your oven to 180°C (350°F) and grease the cake pan.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  3. In a separate bowl, mix the milk, vegetable oil, eggs, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients and mix until just combined. Do not over-mix.
  5. Gently fold in the mixed fresh berries, being careful not to break them apart.
  6. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  7. Bake in the preheated oven for 30 minutes or until a toothpick inserted into the center comes out clean.
  8. Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring to a cooling rack.
  9. Once cool, spread your choice of fruit jam over the top. Slice and serve, garnished with fresh berries and whipped cream if desired.
