Method

  5. Preheat the oil in a deep pot or fryer to 180°C (350°F).
  6. Carefully spoon the batter into a doughnut pan, filling each cavity about ¾ full.
  7. Fry the doughnuts in batches, 2-3 minutes on each side or until golden brown. Use a slotted spoon to transfer them to a cooling rack.
  8. Allow them to cool slightly before dusting with powdered sugar and garnishing with mint leaves if desired.
