  • 150 g granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 large eggs
  • 120 ml buttermilk
  • 80 ml vegetable oil
  • Zest of 1 lemon
  • 60 ml fresh lemon juice
  • 100 g sweetened coconut flakes
  • Powdered sugar for dusting optional

Method
 

  1. Preheat your oven to 180°C (350°F) and grease the muffin tin or line it with paper liners.

  3. In a separate bowl, beat the eggs, then add the buttermilk, vegetable oil, lemon zest, and lemon juice. Mix thoroughly.
  4. Pour the wet ingredients into the dry ingredients and gently fold until just combined. Be careful not to overmix—the batter should be slightly lumpy.
  5. Gently fold in the coconut flakes until evenly distributed throughout the batter.
  6. Divide the batter evenly among the muffin cups, filling them about 2/3 full.
