Ingredients

  • 700 g beef sirloin or lamb (cut into 2.5 cm cubes)
  • 4 tbsp vegetable oil
  • 1 tbsp ground coriander
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • Juice of 1 lime
  • Wooden skewers (soaked in water for 30 mins)
  • 1 avocado, sliced optional
  • 200 g cherry tomatoes, halved optional
  • 150 g cucumber, diced optional
  • Fresh coriander leaves for garnish optional
  • 80 g feta cheese optional

Equipment

  • Grill or barbecue
  • Skewers
  • Large mixing bowl
  • Chef's knife
  • Chopping board

Method

  1. In a mixing bowl, combine the vegetable oil, ground coriander, paprika, salt, black pepper, and lime juice. Mix well.
  2. Add the beef or lamb cubes to the marinade and toss to coat evenly. Cover and let marinate for at least 15 minutes.
  3. Preheat your grill or barbecue to medium-high heat (around 200°C / 400°F).
  4. Thread the marinated meat cubes onto soaked wooden skewers.
  5. Place the skewers on the grill and cook for approximately 10-15 minutes, turning occasionally, until the meat is cooked through and has charred edges. Aim for an internal temperature of 70°C (160°F) for well-done.
  6. Meanwhile, prepare the fresh salad by tossing together the sliced avocado, cherry tomatoes, cucumber, and fresh coriander leaves in a mixing bowl.
  7. Once the skewers are done, remove them from the grill and let them rest for about 10 minutes.
  8. Serve the skewers on a plate accompanied by the fresh salad and sprinkle with feta cheese if desired.
