Ingredients

  • 400 g lean ground pork
  • 200 g lean ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1/2 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • 100 g potatoes, peeled and diced
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh parsley, chopped
  • 1 (23 cm) ready-made light pastry crust
  • Lemon wedges for serving optional
  • Fresh herbs for garnish optional

Equipment

  • Baking dish (23 cm)
  • Griddle or frying pan
  • Chef's knife
  • Large mixing bowl
  • Pastry brush

Method

  1. Preheat the oven to 190°C (375°F).
  2. In a frying pan over medium heat, add diced onion and garlic, sauté until soft, about 5 minutes.
  3. Add ground pork and ground beef to the pan; cook until browned, about 10 minutes. Drain excess fat.
  4. Stir in thyme, cinnamon, nutmeg, potatoes, salt, and pepper. Cook for another 5 minutes until the potatoes are slightly tender. Remove from heat and stir in chopped parsley.
  5. Roll out the pastry crust and place it in the baking dish. Fill with the meat mixture, spreading it evenly.
  6. Cover with a second layer of pastry, sealing the edges by crimping with a fork. Cut a vent or two on top for steam to escape.
  7. Bake in the preheated oven for 25-30 minutes or until the crust is golden brown.
  8. Allow the pie to rest for 15 minutes before slicing. Serve with fresh lemon wedges.

Notes

For a twist on flavor, feel free to substitute ground turkey or chicken for the meats.
Adding a touch of Dijon mustard gives a wonderful depth, too!
If you’re a fan of spices, try mixing in some chili powder for a kick.
This pie can be cooled and stored in the refrigerator for up to 3 days, and it reheats perfectly in the oven or microwave.
Enjoy the delicious aromas and warm hospitality of Quebec City at home!
