  • 400 g beef sirloin
  • 250 g whole grain noodles
  • 200 g pumpkin
  • 200 g cauliflower florets
  • 3 tbsp olive oil
  • 3 cloves garlic
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 50 g fresh parsley
  • (for heat) Crushed red pepper flakes optional

Method
 

  1. Bring a large pot of salted water to a boil. Add the whole grain noodles and cook according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Increase the heat to medium-high and add the sliced beef to the skillet. Cook for 4-5 minutes, stirring frequently until browned and cooked through. Season with dried oregano, paprika, salt, and black pepper.
  4. In the same skillet, add the cubed pumpkin and cauliflower florets. Drizzle with the remaining olive oil and sauté for another 8-10 minutes, or until vegetables are tender and slightly caramelized.
  5. Add the cooked noodles to the skillet and toss to combine, ensuring the noodles are well-coated with the flavors.
  6. Remove from heat and stir in the fresh parsley. Let the dish rest for about 5 minutes before serving.
  7. Serve hot, finishing with an extra sprinkle of black pepper and crushed red pepper flakes if desired.
