- In a frying pan over medium heat, add olive oil and sauté the zucchini slices until they are tender and lightly browned, about 5–7 minutes. Season with salt and pepper while cooking.
- In a mixing bowl, combine the yogurt, chopped mint, and a pinch of salt to make the mint yogurt sauce. Mix well until combined.
- Toast the sandwich rolls lightly in a toaster or on a pan, if desired, until golden brown.
- Spread a generous layer of mint yogurt sauce on each side of the toasted rolls.
- On the bottom half of each roll, layer a portion of black beans, sautéed zucchini, and fresh lettuce. If desired, add avocado and tomato slices for extra flavor and nutrition.
- Top with the other half of the roll and press gently to hold the fillings together.
- Serve the sandwiches warm, cut in half, and garnished with a sprinkle of sesame seeds alongside a simple side salad.
