  • 400 g black beans
  • 2 medium zucchinis
  • 100 g fresh lettuce (e.g., Romaine or butter lettuce)
  • 4 large whole grain sandwich rolls
  • 120 g yogurt (plain)
  • 1 tbsp fresh mint, finely chopped
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp sesame seeds for garnish
  • Avocado slices optional
  • Tomato slices optional

Method
 

  1. In a frying pan over medium heat, add olive oil and sauté the zucchini slices until they are tender and lightly browned, about 5–7 minutes. Season with salt and pepper while cooking.
  2. In a mixing bowl, combine the yogurt, chopped mint, and a pinch of salt to make the mint yogurt sauce. Mix well until combined.
  3. Toast the sandwich rolls lightly in a toaster or on a pan, if desired, until golden brown.
  4. Spread a generous layer of mint yogurt sauce on each side of the toasted rolls.
  5. On the bottom half of each roll, layer a portion of black beans, sautéed zucchini, and fresh lettuce. If desired, add avocado and tomato slices for extra flavor and nutrition.
  6. Top with the other half of the roll and press gently to hold the fillings together.
  7. Serve the sandwiches warm, cut in half, and garnished with a sprinkle of sesame seeds alongside a simple side salad.
