Ingredients
  

  • 4 whole pita bread
  • 400 g black beans, cooked and drained
  • 250 g cauliflower, cut into small florets
  • 200 g cooked beets, diced
  • 150 g plain yogurt
  • 30 g fresh mint leaves, finely chopped
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • 2 tbsp sesame seeds (for garnish)
  • Additional fresh herbs (like cilantro) optional
  • Sliced avocado optional
  • Hot sauce optional

Method
 

  1. In a pot of boiling salted water, cook the cauliflower florets for about 5-7 minutes until tender. Drain and set aside.
  2. In a mixing bowl, combine the cooked black beans, diced beets, cooked cauliflower, ground cumin, salt, and pepper. Stir well to combine all the flavors.
  3. In another bowl, mix the yogurt with chopped mint leaves. Season with salt and a drizzle of olive oil for added richness. Adjust the mint level to your taste.
  4. Preheat your oven to 180°C (350°F) to warm the pita bread.
  5. Carefully open each pita and fill with the black bean mixture, about 1/4 of the mix per pita.
  6. Place the stuffed pitas on a baking tray and heat in the oven for about 5-7 minutes until warm and slightly crispy.
  7. Remove from the oven, cut in half, and drizzle generously with the mint yogurt sauce. Sprinkle with sesame seeds and serve immediately with a simple side salad.
