- In a mixing bowl, combine the Greek yogurt, honey, peppermint extract, chopped mint leaves, and lemon juice. Mix well until all ingredients are fully incorporated and the yogurt is smooth.
- Taste the mixture and adjust sweetness with more honey if desired.
- Divide the yogurt mixture equally into small cups or jars, smoothing the tops with a spatula.
- If desired, add your favorite toppings such as fresh berries or granola on top of each cup.
- Cover the cups and place them in the refrigerator for at least 30 minutes to allow the flavors to meld.

For a dairy-free option, simply substitute Greek yogurt with coconut yogurt, and you can still enjoy the minty goodness! Feel free to mix in additional flavors like vanilla or almond extract to switch things up. These yogurt cups can be stored in the fridge for up to 3 days, but I doubt they'll last that long!
