- Preheat your oven to 180°C (350°F). Grease the baking dish with cooking spray or line it with parchment paper.
- In a mixing bowl, combine the rolled oats, coconut oil, yogurt, honey (or maple syrup), peppermint extract, and salt. Mix well until the ingredients are thoroughly combined.
- Fold in the chopped nuts (and shredded coconut if using) until evenly distributed.
- Transfer the mixture into the prepared baking dish, pressing it down firmly to create an even layer.
- Bake in the preheated oven for 25 minutes or until the edges turn golden brown.
- Once baked, remove from the oven and let it cool at room temperature for 30 minutes to set properly.
- Cut into bars once cooled, and garnish with fresh mint leaves if desired.
