  • 600 g plain Greek yogurt
  • 3 tbsp honey
  • 1 tsp peppermint extract
  • 120 g fresh mint leaves, finely chopped
  • 60 g mini chocolate chips
  • 1 tbsp lemon juice
  • Fresh fruit (e.g., berries, banana slices) optional
  • Crushed nuts (e.g., almonds, walnuts) optional

  • Silicone muffin molds or small cups
  • Wooden spoon or spatula
  • Electric mixer (or whisk)

Method
 

  1. In a mixing bowl, combine the Greek yogurt, honey, peppermint extract, and lemon juice. Mix well until smooth and creamy.
  2. Fold in the finely chopped mint leaves and mix until evenly distributed. If using, stir in the mini chocolate chips for added sweetness.
  3. Spoon the yogurt mixture into silicone muffin molds or small cups, filling each one about three-quarters full.
  4. Smooth the tops with a spatula or spoon.
  5. Place the molds in the refrigerator and let chill for at least 30 minutes until slightly firm.
  6. Once set, gently pop the yogurt cups out of the molds and serve chilled. Enjoy as a delightful snack or dessert!
