  • 3 medium (approx. 350 g) Ripe bananas
  • 150 g Tahini
  • 100 g Oats (rolled)
  • 80 ml Maple syrup
  • 40 g Cocoa powder
  • 1 tsp Vanilla extract
  • 1 tsp Baking powder
  • 2 tsp Citrus zest (orange or lemon)
  • 50 g Chopped nuts (such as walnuts or almonds) for garnish optional
  • 80 g Dark chocolate chips for added decadence optional

  • 8x8 inch (20x20 cm) square baking dish or pan
  • Baking parchment
  • Food processor (optional, for a smoother texture)

Method
 

  1. Line the baking dish with parchment paper, leaving some overhang for easy removal.
  2. In a mixing bowl, mash the ripe bananas using a fork until smooth.
  3. Add tahini, maple syrup, cocoa powder, vanilla extract, baking powder, and citrus zest to the bananas. Mix until well combined.
  4. Stir in the rolled oats, ensuring an even distribution in the mixture. If using, fold in the chocolate chips or chopped nuts.
  5. Transfer the mixture to the lined baking dish and firmly press down until it forms an even layer.
  6. Cover the dish and place it in the refrigerator for at least 2 hours to set.
  7. Once set, remove from the dish using the parchment overhang and cut into neat squares. Garnish with additional citrus zest or nuts as desired.
