  • 45 g unsweetened cocoa powder
  • 45 g cornstarch
  • 1/4 tsp salt
  • 780 ml whole milk
  • 100 g semi-sweet chocolate, chopped
  • 1 tsp vanilla extract
  • 70 g unsalted butter
  • 50 g sesame seeds optional
  • 25 g honey optional
  • Pinch sea salt optional

Method
 

  1. In a mixing bowl, whisk together the sugar, cocoa powder, cornstarch, and salt until well combined.
  2. Gradually add the milk to the dry ingredients while continuously whisking to prevent lumps from forming.
  3. Pour the mixture into a saucepan and cook over medium heat, stirring constantly until thickened (about 8-10 minutes).
  4. Once the pudding has thickened, remove from heat and stir in the chopped chocolate, butter, and vanilla extract until smooth and glossy.
  5. Pour the pudding into serving dishes and let it cool to room temperature. Then, cover with plastic wrap and refrigerate for at least 2 hours until set.
  6. Meanwhile, prepare the sesame crunch by toasting the sesame seeds in a dry skillet over medium heat until golden (about 3-4 minutes). Remove from heat and let cool slightly.
  7. In a small bowl, combine the toasted sesame seeds with honey and a pinch of sea salt. Let it cool completely, then break into crunchy pieces.
  8. Serve the chocolate pudding garnished with the sesame crunch on top.
