Ingredients
  

  • 500 g mixed fresh fruits (e.g., berries, apples, peaches)
  • 150 g granulated sugar
  • 2 tbsp lemon juice
  • Zest of 1 lemon
  • 200 g rolled oats
  • 100 g all-purpose flour
  • ½ tsp baking powder
  • 100 g unsalted butter, melted
  • 50 g sesame seeds
  • Fresh mint leaves for garnish optional

Method
 

  1. Preheat your oven to 180°C (350°F).
  2. In a large mixing bowl, combine the mixed fresh fruits, 100 g of sugar, lemon juice, and lemon zest. Stir gently to coat the fruit evenly.
  3. In a separate bowl, combine the rolled oats, flour, baking powder, and remaining 50 g of sugar. Add in the melted butter and mix until the mixture resembles coarse crumbs.
  4. Pour the fruit mixture into the baking dish, spreading it evenly.
  5. Sprinkle the oat mixture over the top of the fruit layer. Finally, sprinkle the sesame seeds over the oats for that lovely crunch.
  6. Bake in the preheated oven for 30-35 minutes or until the top is golden brown and the fruit is bubbling around the edges.
  7. Once done, remove from the oven and let it cool for about 10 minutes before slicing into neat portions.
  8. Serve warm or at room temperature, garnished with fresh mint leaves if desired.
