Ingredients
  

  • 4 large eggs 4 large eggs
  • 200 g 200 g pumpkin, diced
  • 1 ripe avocado 1 ripe avocado, sliced
  • 1 tbsp 1 tbsp ground cumin
  • 1 orange 1 orange, zested and juiced
  • 4 slices 4 slices of crusty bread
  • 2 tbsp 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Red pepper flakes (for an extra kick) optional
  • Feta cheese (for a creamy addition) optional

Equipment

  • Flatbread pan (e.g., tawa or cast iron skillet)
  • Heatproof mixing bowl
  • Cooking spatula
  • Toaster or oven for bread

Method
 

  1. In a mixing bowl, combine the diced pumpkin, olive oil, ground cumin, salt, and pepper. Mix well to coat the pumpkin evenly.
  2. Heat a skillet over medium heat and add the seasoned pumpkin. Sauté for about 10 minutes or until tender and slightly caramelized. Remove from skillet and set aside.
  3. In the same skillet, add a little more oil if necessary. Crack the eggs directly into the pan. Cook for about 4-5 minutes, or until the whites are set but the yolks remain runny (or to your desired doneness).
  4. While the eggs are cooking, toast the slices of bread until golden brown.
  5. On each slice of toast, layer the sautéed pumpkin, then top with avocado slices. Carefully place an egg on top of each open-faced sandwich.
  6. Drizzle with fresh orange juice, sprinkle with orange zest, and garnish with chopped parsley. Finish with red pepper flakes or feta cheese if using. Serve immediately and enjoy!
