  • 400 g mixed fresh fruits (e.g., apples, pears, peaches)
  • 120 ml strong brewed coffee, cooled
  • 50 g brown sugar
  • 2 large eggs
  • 120 g Greek yogurt
  • 1 tsp vanilla extract
  • 50 g shredded coconut, toasted
  • (for serving) Whipped cream optional
  • Extra toasted coconut flakes optional

Method
 

  1. Preheat your oven to 180°C (350°F).
  2. Prepare the fruits by peeling and chopping them into bite-sized pieces, then place them in your baking dish.
  3. In a mixing bowl, whisk together the cooled brewed coffee, brown sugar, eggs, Greek yogurt, and vanilla extract until smoothly combined.
  4. Pour the coffee mixture over the chopped fruits, ensuring they are well coated.
  5. Bake in the preheated oven for about 30 minutes, or until the mixture is set and slightly golden on top. It should have a firm texture with a light jiggle in the center.
  6. Once baked, remove from the oven and let it rest for 10 minutes.
  7. Before serving, top with the toasted coconut flakes for added crunch and flavor. Optional: add a dollop of whipped cream if desired.
