  • 50 g 50 g fresh spinach, chopped
  • 1 tbsp 1 tbsp unsalted butter
  • A pinch of salt
  • Grated cheese optional
  • A dash of mild seasoning optional

Method
 

  1. In a mixing bowl, crack the eggs and whisk them until well beaten. If using, add a pinch of salt.
  2. Heat the non-stick frying pan over low heat and melt the butter until it begins to foam.
  3. Add the chopped spinach to the pan and sauté for about 1–2 minutes until it wilts down and becomes tender.
  4. Pour the beaten eggs over the wilted spinach. Using a spatula, gently stir the mixture continuously.
  5. Cook for approximately 5–7 minutes, or until the eggs are softly set and have a creamy texture. Ensure not to overcook to maintain softness.
  6. Once cooked, remove from the heat and allow to cool slightly before serving in small portions.
  7. If desired, sprinkle grated cheese on top before serving for added flavor and creaminess.
