Ingredients

  • 200 g all-purpose flour
  • 150 g granulated sugar
  • 100 g unsalted butter, softened
  • 2 large eggs
  • 200 g peeled and grated apples (about 2 medium apples)
  • 100 g semi-sweet chocolate chips
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 1/4 tsp salt
  • 120 ml milk
  • A sprinkle of powdered sugar for garnish optional

Equipment

  • Heatproof mixing bowl
  • Electric mixer (or whisk)
  • 9-inch round cake pans (2)
  • Cooking spatula
  • Cheese grater
  • Large pot or Dutch oven

Method

  1. Preheat your oven to 180°C (350°F) and grease the 9-inch round cake pan.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the grated apples and milk, combining thoroughly.
  5. In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  6. Gradually add the dry ingredients to the wet mixture, mixing just until combined. Be careful not to over-mix!
  7. Fold in the chocolate chips gently until evenly distributed.
  8. Pour the batter into the prepared cake pan and spread evenly.
  9. Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.
  10. Let the cake rest in the pan for about 10 minutes before transferring to a wire rack to cool completely.
  11. Once cool, garnish with powdered sugar if desired, slice and serve.
