Ingredients
  

  • 600 g chicken breast
  • 4 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 2 tbsp lemon juice
  • 4 cloves garlic, minced
  • 2 tsp smoked paprika
  • 1 tsp cayenne pepper
  • 1 tsp dried oregano
  • to taste Salt and black pepper
  • 8 wooden skewers
  • for garnish Fresh parsley, chopped optional
  • for serving Pita bread optional
  • for dipping Tzatziki sauce optional

Method
 

  1. In a mixing bowl, combine olive oil, red wine vinegar, lemon juice, minced garlic, smoked paprika, cayenne pepper, dried oregano, salt, and black pepper to create the marinade.
  2. Cut the chicken breast into bite-sized cubes and add them to the marinade, ensuring they are well coated. Cover and let marinate for at least 30 minutes in the refrigerator.
  3. Preheat the grill or grill pan over medium-high heat.
  4. Thread the marinated chicken cubes onto soaked skewers. Grill the skewers for about 12–15 minutes, turning occasionally, until they are cooked through and have a nice char (internal temperature should reach 75°C / 165°F).
  5. While grilling, cut lemon wedges and set aside.
  6. Remove the skewers from the grill and let them rest for 5 minutes. Serve hot with lemon wedges on the side, garnished with fresh parsley if desired, alongside warmed pita and tzatziki sauce.
