  • 500 g 2 large ripe mangoes, diced
  • 300 g 1 medium cucumber, diced
  • 150 g 1 red capsicum (bell pepper), diced
  • 100 g 1 small red onion, finely chopped
  • 100 g 100 g baby spinach leaves
  • 30 ml 2 tablespoons olive oil
  • 30 ml Juice of 1 lime
  • Salt and pepper to taste
  • 1 small red chili, finely chopped optional
  • 50 g 50 g roasted peanuts or cashews for crunch optional

Method
 

  1. Begin by washing and preparing all the vegetables and mangoes. Dice the mangoes, cucumber, and capsicum, and finely chop the red onion and chili if using.
  2. In a large mixing bowl, combine the chopped mangoes, cucumber, capsicum, red onion, and baby spinach leaves.
  3. In a small bowl, whisk together the olive oil, lime juice, salt, and pepper until well combined.
  4. Pour the dressing over the salad mixture and gently toss to coat all the ingredients evenly.
  5. Taste the salad and adjust the seasoning if necessary, adding more lime juice or salt as desired.
  6. Transfer the salad to a serving plate and garnish with roasted nuts if using. Serve immediately with lemon wedges on the side for an extra zesty kick.
