In a mixing bowl, combine the plain Greek yogurt with ground cinnamon and half of the honey (if using). Stir well to incorporate the flavors.
Prepare your glass cups or parfait glasses by layering ¼ of the yogurt mixture at the bottom of each glass.
Add a layer of sliced strawberries on top of the yogurt, followed by a sprinkle of granola.
Repeat the layering process, adding another ¼ of the yogurt, more strawberries, and a second layer of granola until the glasses are full.
Drizzle the remaining honey on top of each parfait and garnish with mint leaves if desired.
Serve immediately or refrigerate for up to 30 minutes before enjoying.
