  • 60 g unsalted butter, melted

  • Zest of 1 lemon (about 1 tablespoon)
  • 120 ml buttermilk
  • 200 g mixed fresh berries (strawberries, blueberries, raspberries) optional
  • Powdered sugar for dusting optional

Method
 

  1. In a mixing bowl, combine the mashed bananas, sugar, melted butter, eggs, and vanilla extract. Whisk until well-blended.
  2. In another bowl, whisk together the flour, baking powder, baking soda, salt, and lemon zest.
  3. Gradually add the dry ingredients to the banana mixture, alternating with the buttermilk, stirring until just combined. The batter should be thick yet pourable.
  4. Heat oil in a deep fryer or a heavy-bottomed pot to 180°C (356°F).
  5. Using a doughnut cutter, gently drop the doughnut batter into the oil, frying for about 2-3 minutes per side or until golden brown.
  6. Once fried, transfer the doughnuts to a cooling rack to drain excess oil. Let them rest for about 10 minutes.
