  • 300 g mixed berries (strawberries, blueberries, raspberries)
  • 50 g granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 200 ml water
  • 2 tbsp cornstarch
  • 100 g pitted dates optional
  • 50 ml coconut milk optional
  • Fresh mint leaves optional

Method
 

  1. In a medium saucepan, combine the mixed berries, granulated sugar, lemon juice, and water over medium heat. Allow the mixture to simmer for about 10 minutes or until the berries release their juices and soften.
  2. If you prefer a thicker compote, dissolve cornstarch in a tablespoon of cold water and stir it into the berry mixture. Cook for an additional 5 minutes until slightly thickened.
  3. Remove from heat and add lemon zest. Stir well and let the compote cool to room temperature before transferring to the fridge for 10 minutes.
  4. In the meantime, prepare the date caramel. In a heatproof container, blend the pitted dates with coconut milk until smooth. Optionally, place over a double boiler to warm slightly for easier blending.
  5. To serve, scoop the chilled berry compote into dessert cups, drizzle generously with date caramel, and garnish with fresh mint leaves.
