  • 250 g Medjool dates, pitted
  • 45 g unsweetened shredded coconut (for rolling)
  • Zest of 1 large lemon
  • 30 ml fresh lemon juice
  • 60 g almonds, finely chopped
  • 1 tsp vanilla extract
  • A pinch of sea salt optional
  • Additional coconut flakes for garnish optional

Method
 

  1. In a mixing bowl, combine the pitted dates, lemon zest, fresh lemon juice, vanilla extract, and finely chopped almonds.
  2. Using a food processor, pulse the mixture until well combined and sticky, about 1-2 minutes.
  3. Line a baking sheet with parchment paper.
  4. With your hands, form the mixture into small bite-sized balls or shapes, about 2.5 cm in diameter, and place them onto the lined baking sheet.
  5. Roll each candy bite in the shredded coconut until well coated.
  6. Once all bites are coated, refrigerate for at least 30 minutes to set.
  7. Serve chilled or at room temperature, garnished with a sprinkle of coconut flakes if desired.
