- Start by placing the pitted dates in a food processor. Blend until they form a sticky paste. You may need to scrape the sides occasionally.
- In a mixing bowl, combine the date paste with rolled oats, lemon zest, lemon juice, almond flour, maple syrup (if using), and a pinch of salt. Mix until everything is well integrated.
- Using your hands, form small balls (about 2.5 cm in diameter) from the mixture. Roll each ball in additional shredded coconut for a nice coating.
- Place the coated date bites on a baking sheet lined with parchment paper, cover with plastic wrap, and let them chill in the refrigerator for at least 30 minutes to firm up.
- Once set, these delightful bites are ready to be enjoyed! Serve them fresh or keep them stored in an airtight container in the refrigerator.
