In a food processor, combine the pitted medjool dates, rolled oats, coconut flakes, lemon zest, lemon juice, honey, and salt.
Pulse until the mixture is well combined and sticks together. It should be slightly sticky but maintain a chunky texture.
Transfer the mixture to a mixing bowl. If desired, fold in chopped nuts for additional flavor and crunch.
Line a baking tray with parchment paper.
Using your hands, take small portions of the mixture (about 15 grams each) and roll them into bite-sized balls. Place them on the prepared tray.
Once all the mixture is shaped, roll each ball in additional coconut flakes to coat.
Refrigerate the candy bites for at least 30 minutes to firm up.
Serve chilled or at room temperature, garnished with extra lemon zest if desired.
