  • Zest of 1 large lemon
  • 30 ml fresh lemon juice
  • 70 g unsweetened shredded coconut
  • 1 tbsp honey or maple syrup (optional for extra sweetness)
  • Extra coconut for coating optional
  • Chopped pistachios for garnish optional

Method
 

  1. In a food processor, combine the pitted dates, chopped almonds, lemon zest, fresh lemon juice, and honey. Process until smooth and well combined, scraping down the sides as necessary.
  2. Once the mixture is consistent, transfer it to a mixing bowl. Use your hands to form small balls, roughly the size of a walnut, and place them on a parchment-lined baking sheet.
  3. Roll each ball in the shredded coconut until fully coated. If desired, roll in additional coconut for a thicker layer.
  4. Refrigerate the candy bites for about 30 minutes to firm them up.
