In a food processor, combine the pitted Medjool dates, almond flour, lemon zest, lemon juice, vanilla extract, and sea salt. Pulse until the mixture is well blended and sticky.
If your mixture is too dry, add a teaspoon of water at a time until you reach the desired consistency.
Once ready, scoop about a tablespoon of the mixture and roll it into a ball or shape it into a small candy bite.
Roll each candy bite in the coconut flakes to coat them evenly.
Place the coated bites on a baking tray lined with parchment paper.
Once all bites are shaped and coated, refrigerate for at least 30 minutes to firm up.
