  • 250 g pitted dates
  • 75 g raw cashews
  • 50 g shredded coconut
  • 2 tbsp lemon juice
  • Zest of 1 lemon
  • 1 tbsp maple syrup
  • Extra shredded coconut for rolling optional
  • Chopped pistachios or almonds for garnish optional

Method
 

  1. In your food processor, blend the pitted dates and raw cashews until a sticky mixture forms. You may need to stop and scrape down the sides a few times.
  2. Add lemon juice, lemon zest, and shredded coconut (reserve a bit for coating) to the date mixture. If you desire extra sweetness, add maple syrup to taste. Pulse until everything is well combined and a sticky dough forms.
  3. Using your hands, take small portions of the mixture (about 20g each) and roll them into bite-sized balls. Place them on a baking sheet lined with parchment paper.
  4. Roll each ball in the reserved shredded coconut to coat evenly.
  5. Place the baking sheet in the refrigerator for 30 minutes to allow the candy bites to firm up.
