Once the mixture has reached a sticky, dough-like consistency, scoop out small amounts (about 20 g each) to shape into bite-sized balls.
Roll each ball in shredded coconut until fully coated. If you desire a bit of extra texture, feel free to add chopped nuts to the coconut before rolling.
Place the coated candy bites on a baking tray lined with parchment paper and refrigerate for at least 30 minutes to set.
