  • 250 g Medjool dates, pitted
  • 75 g rolled oats
  • 50 g almond flour
  • Zest of 2 lemons
  • 60 ml fresh lemon juice
  • 30 g honey or maple syrup
  • 50 g unsweetened shredded coconut, plus extra for coating
  • 1 tsp vanilla extract
  • A pinch of sea salt
  • Extra lemon zest for garnish optional

Method
 

  1. In a food processor, combine the pitted Medjool dates, rolled oats, almond flour, lemon zest, lemon juice, honey or maple syrup, shredded coconut, vanilla extract, and sea salt. Pulse until the mixture becomes a sticky, cohesive dough.
  2. Line a baking sheet with parchment paper.
  3. Using your hands, scoop out small portions of the mixture (about 20 g each) and roll them into bite-sized balls. Place on the prepared baking sheet.
  4. After forming all the candy bites, gently roll each one in the extra shredded coconut for a beautiful finish.
  5. Cover the baking sheet with plastic wrap and refrigerate for at least 30 minutes to allow them to firm up.
  6. Once chilled, serve the candy bites, garnished with extra lemon zest if desired. Enjoy your refreshing treat!
