  • 200 g Medjool dates, pitted
  • 50 g almonds, finely chopped
  • Zest of 1 medium lemon
  • 30 ml fresh lemon juice
  • 50 g shredded coconut, unsweetened
  • 1/2 tsp vanilla extract
  • a pinch sea salt optional
  • Extra coconut for rolling optional
  • Chopped pistachios or walnuts for variation optional

  • 20 cm (8 inch) square baking tray
  • Baking sheet lined with parchment paper
  • Measuring spoons
  • Rolling pin for flattening

Method
 

  1. In a food processor, combine the pitted dates, chopped almonds, lemon zest, fresh lemon juice, and vanilla extract. Pulse until the mixture is well combined and sticky. You may need to scrape down the sides occasionally.
  2. Take small amounts of the mixture and roll them into bite-sized balls (approximately 2.5 cm in diameter).
  3. Spread the shredded coconut on a plate. Roll each ball in the coconut until fully coated. If desired, you can also add a pinch of sea salt for enhanced flavor.
  4. Place the coated date candy bites on a baking tray lined with parchment paper. Once all the balls are rolled, refrigerate for about 30 minutes to firm up.
  5. Serve chilled or at room temperature, garnished with a sprinkle of extra coconut or chopped nuts if desired.
