Method
- In a food processor, combine the pitted dates, chopped almonds, lemon zest, fresh lemon juice, and vanilla extract. Pulse until the mixture is well combined and sticky. You may need to scrape down the sides occasionally.
- Take small amounts of the mixture and roll them into bite-sized balls (approximately 2.5 cm in diameter).
- Spread the shredded coconut on a plate. Roll each ball in the coconut until fully coated. If desired, you can also add a pinch of sea salt for enhanced flavor.
- Place the coated date candy bites on a baking tray lined with parchment paper. Once all the balls are rolled, refrigerate for about 30 minutes to firm up.
- Serve chilled or at room temperature, garnished with a sprinkle of extra coconut or chopped nuts if desired.

Notes
Feel free to substitute the almonds with your favorite nut or seed, such as pecans or sunflower seeds, for a different texture and flavor!
These candy bites can be stored in an airtight container in the refrigerator for up to one week, making them a wonderful make-ahead treat.
If you find the mixture too sticky, a little extra coconut can help it hold together better.
Enjoy experimenting, and let these candy bites brighten up your day!
