Ingredients

  • 200 g Medjool dates, pitted
  • 50 g rolled oats
  • 60 g unsweetened shredded coconut (plus extra for garnish)
  • Zest of 1 lemon
  • 30 ml fresh lemon juice
  • 1 tsp vanilla extract
  • Pinch of sea salt
  • Chopped nuts (almonds or walnuts) for extra crunch optional

Equipment

  • Heatproof mixing bowl
  • Blender or food processor
  • Baking sheet
  • Baking sheet lined with parchment paper
  • Small cookie scoop

Method

  1. Begin by placing the pitted dates, rolled oats, shredded coconut, lemon zest, lemon juice, vanilla extract, and sea salt into a food processor.
  2. Pulse the mixture until it becomes a sticky dough-like consistency, scraping down the sides as necessary. This process should take around 1–2 minutes.
  3. Line a baking sheet with parchment paper.
  4. Use a small cookie scoop or your hands to form the mixture into bite-sized balls, placing them onto the prepared baking sheet.
  5. Roll the candy bites in the extra shredded coconut to coat them evenly.
  6. Once all bites are formed and coated, refrigerate for at least 30 minutes to firm up.
  7. Serve chilled; they can be garnished with fresh lemon zest or additional coconut flakes for an elegant touch. Enjoy your sweet creations!
