- In a food processor, combine the pitted Medjool dates, toasted almonds, lemon zest, lemon juice, vanilla extract, and a pinch of sea salt. Pulse until the mixture is finely chopped and starts to clump together, approximately 1-2 minutes.
- Transfer the mixture to a mixing bowl and use your hands to form small bite-sized balls, roughly the size of a tablespoon.
- Roll the date balls in the shredded coconut until fully coated. Place them onto a baking sheet lined with parchment paper.
- Once rolled, refrigerate the candy bites for at least 30 minutes until they firm up.
- Serve chilled or at room temperature, optionally drizzled with dark chocolate for an extra touch of flavor.
