Ingredients

  • 250 g all-purpose flour
  • 150 g granulated sugar
  • 7 g baking powder
  • 1/2 tsp salt
  • 60 ml whole milk
  • 2 large eggs
  • 75 g unsalted butter, melted
  • Zest of 2 lemons
  • 30 ml lemon juice
  • 150 g mixed berries (e.g., blueberries, raspberries, strawberries) optional
  • Powdered sugar for dusting optional

Equipment

  • Deep frying pot
  • Candy thermometer
  • Large mixing bowl
  • Electric mixer or whisk
  • Doughnut cutter (or round cookie cutter)
  • Slotted spoon
  • Cooling rack

Method

  1. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, combine the milk, eggs, melted butter, lemon zest, and lemon juice. Mix well.
  3. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Avoid overmixing; a few lumps are okay.
  4. Cover the dough and let it rest in the refrigerator for about 5 minutes.
  5. Heat oil in a deep frying pot to 180°C (350°F).
  6. Roll out the dough on a lightly floured surface. Cut into doughnut shapes using a doughnut cutter.
  7. Carefully drop the doughnuts into the hot oil, a few at a time, and fry for about 2-3 minutes on each side, or until golden brown.
  8. Use a slotted spoon to remove the doughnuts and transfer them to a cooling rack.
  9. While still warm, dust with powdered sugar and top with mixed berries before serving.

Notes

For a healthier twist, try substituting half of the all-purpose flour with whole wheat flour.
For an extra burst of flavor, consider adding a dash of vanilla extract to the wet ingredients.
If you have leftover doughnuts, store them in an airtight container for up to 2 days or freeze them for longer storage. Reheat in a warm oven to restore their texture before serving.
Get creative and feel free to experiment with different berry combinations or even a citrus glaze!
