- In a pot, heat the olive oil over medium heat and add the ground turkey. Cook until it’s no longer pink, which should take about 5-7 minutes.
- Add the chopped zucchini and potato to the pot, then pour in the chicken broth. Bring the mixture to a simmer.
- Cover the pot and cook for an additional 15-20 minutes, or until the vegetables are very soft. Stir occasionally to prevent sticking.
- Remove from heat and let cool for a few minutes.
- Transfer the cooked mixture to a blender or food processor and blend until smooth, or to your desired texture with soft lumps.
- If the puree is too thick, add a little more broth or water to reach the desired consistency.
- Allow the meal to cool down to a safe temperature before serving in small portions.
