Ingredients
  

  • 150 g zucchini
  • 200 g ground turkey
  • 1 medium potato
  • 60 ml low-sodium chicken broth
  • 1 tbsp olive oil
  • a pinch dried oregano optional

Equipment

  • Blanching pot (for broccoli)
  • Chef's knife
  • Large mixing bowl
  • Blender or food processor
  • Cookie scoop or spoon

Method
 

  1. In a pot, heat the olive oil over medium heat and add the ground turkey. Cook until it’s no longer pink, which should take about 5-7 minutes.
  2. Add the chopped zucchini and potato to the pot, then pour in the chicken broth. Bring the mixture to a simmer.
  3. Cover the pot and cook for an additional 15-20 minutes, or until the vegetables are very soft. Stir occasionally to prevent sticking.
  4. Remove from heat and let cool for a few minutes.
  5. Transfer the cooked mixture to a blender or food processor and blend until smooth, or to your desired texture with soft lumps.
  6. If the puree is too thick, add a little more broth or water to reach the desired consistency.
  7. Allow the meal to cool down to a safe temperature before serving in small portions.
