  • 200 g Medjool dates, pitted
  • 50 g rolled oats
  • 25 g almonds, finely chopped
  • 1 tsp ground black pepper
  • 1 tsp cinnamon
  • A pinch of sea salt
  • 2 tbsp honey or maple syrup
  • 25 g unsweetened shredded coconut optional
  • Extra finely chopped nuts or seeds optional

  • Baking tray lined with parchment paper

Method
 

  1. Begin by placing the pitted Medjool dates in the food processor. Pulse until they form a sticky paste.
  2. In a mixing bowl, combine the date paste, rolled oats, chopped almonds, ground black pepper, cinnamon, and sea salt. If desired, add honey or maple syrup for added sweetness.
  3. Mix thoroughly until all ingredients are well incorporated. If the mixture is too dry, add a splash of water to help it bind together.
  4. With clean hands, scoop out tablespoon-sized portions and roll them into balls.
  5. If using, roll the balls in shredded coconut or extra chopped nuts for added texture.
  6. Place the balls on a baking tray lined with parchment paper and refrigerate for at least 15 minutes to set.
