Ingredients

  • 250 g ground turkey
  • 150 g cooked jasmine rice
  • 100 g radishes, sliced
  • 100 g cooked beets, diced
  • 2 tbsp olive oil
  • 1 tbsp black pepper (adjust to taste)
  • 1 tbsp fresh dill, chopped
  • 1 lime, cut into wedges
  • Salt to taste
  • Sliced cucumbers optional
  • Avocado slices optional
  • Sesame seeds optional

Equipment

  • Non-stick skillet
  • Large mixing bowl
  • Immersion blender (optional for pureeing beets)
  • Bamboo sushi mat (optional for presentation)

Method

  1. In a mixing bowl, combine ground turkey with salt, black pepper, and half of the fresh dill. Mix well until everything is incorporated.
  2. Heat the olive oil in a non-stick skillet over medium heat. Add the seasoned turkey and cook for about 10-15 minutes, stirring occasionally, until browned and cooked through (internal temperature should reach 75°C / 165°F).
  3. While the turkey is cooking, warm the cooked jasmine rice in a separate pot, seasoning gently with salt and a squeeze of lime if desired.
  4. Once the turkey is cooked, remove the skillet from the heat and let it rest for about 5 minutes.
  5. To assemble the bento box, divide the rice into two sections. Top with the cooked turkey.
  6. On the side, arrange the sliced radishes and diced beets for color and crunch.
  7. Garnish with the remaining chopped dill and serve with lime wedges on the side.
  8. Optional: If using a bamboo sushi mat, roll the rice and turkey in it for an elegant presentation before placing in the bento box.
