- Begin by preparing all your ingredients. Peel and dice the carrots, and chop the chicken breast into small pieces.
- In a saucepan, bring the water or chicken broth to a boil over medium heat.
- Once boiling, add the diced carrots and chicken to the saucepan. Reduce the heat to a gentle simmer.
- Cover the saucepan and cook for 20-25 minutes, or until the chicken is cooked through and the carrots are very soft. The chicken should have an internal temperature of 75°C (165°F).
- After cooking, remove the saucepan from heat and let it cool slightly for 5 minutes.
- Using a blender or food processor, blend the mixture until you reach a smooth and creamy puree. For a thicker texture with small lumps, blend less and stir gently.
- If desired, finish with a drizzle of olive oil for added nutrients and taste.
- Allow the puree to cool completely before serving. Store any leftovers in the refrigerator or freeze for future meals.
