Ingredients
  

  • 250 g carrots, peeled and diced
  • 150 g boneless chicken breast, diced
  • 500 ml water or low-sodium chicken broth
  • 1 tbsp olive oil
  • a pinch of mild herbs (like thyme or parsley) optional

Method
 

  1. Begin by preparing all your ingredients. Peel and dice the carrots, and chop the chicken breast into small pieces.
  2. In a saucepan, bring the water or chicken broth to a boil over medium heat.
  3. Once boiling, add the diced carrots and chicken to the saucepan. Reduce the heat to a gentle simmer.
  4. Cover the saucepan and cook for 20-25 minutes, or until the chicken is cooked through and the carrots are very soft. The chicken should have an internal temperature of 75°C (165°F).
  5. After cooking, remove the saucepan from heat and let it cool slightly for 5 minutes.
  6. Using a blender or food processor, blend the mixture until you reach a smooth and creamy puree. For a thicker texture with small lumps, blend less and stir gently.
  7. If desired, finish with a drizzle of olive oil for added nutrients and taste.
  8. Allow the puree to cool completely before serving. Store any leftovers in the refrigerator or freeze for future meals.
