  • 200 g mixed berries (strawberries, blueberries, raspberries)
  • 150 g ripe bananas, mashed
  • 100 ml brewed coffee, cooled
  • 80 g honey or maple syrup (adjusted to sweetness preference)
  • 150 g rolled oats
  • 50 g all-purpose flour
  • 50 g dark chocolate chips
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • (for serving) Whipped cream optional
  • Additional chocolate chips optional

Method
 

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine the mashed bananas, brewed coffee, honey (or maple syrup), and vanilla extract. Stir until well blended.
  3. In another bowl, mix together the rolled oats, all-purpose flour, cinnamon, and mixed berries.
  4. Slowly add the wet ingredients to the dry mixture, stirring until everything is well combined. Gently fold in the chocolate chips.
  5. Pour the mixture into the greased baking dish, smoothing the top with a spatula.
  6. Bake in the preheated oven for 25-30 minutes or until the top is slightly golden and firm to touch.
